Baking Banana Bread

I LOOOOOVE High Five Magazine (its the equivalent of Highlights for Children for the preschool set), Sophia and I pour through its pages as soon as it comes in the mail (BTW, thanks Nana and Gumps for this awesome Christmas present!). Besides the fun stories and hidden pictures (which I think like her mommy is Sophia's favorite part), they always have 1 craft project and 1 recipe to make together. March's recipe is banana bread, and we decided to make it today:



The best part of this recipe was that besides the oven parts and measuring stuff (that will come next), Sophia could do pretty much everything, from mashing the bananas to mixing the rest of the parts in the bowl. I could even walk away for awhile to take care of Jude, or to find my phone so I could take pictures. The recipe said you could add nuts or chocolate chips, we added both and oh yum, never leaving chocolate chips out again.

  2. I Should have posted the recipe before, was kinda hoping to link it to High Five Magazine Somehow, but they don't have it posted on their site. So, to reference it, it came from the March 2011 edition and is from their Cook It section. I added some embellishments to the original recipe

    Banana Bread
    You Need:
    Large Mixing Bowl
    Potato Masher
    Small Bowl
    Fork
    Mixing Spoon
    4x8 In Loaf Pan
    Vegetable Oil Spray (to grease the pan)
    1/3 C Melted Butter
    4 Very Ripe Bananas (I collect too ripe ones in the freezer in their peels, then let them thaw in the bowl, snip off the end and squish the innards in the bowl)
    1 Egg
    3/4 C Sugar
    1 t Vanilla (I always put more vanilla in then recipes call for (-:)
    1 t Baking Soda
    1/4 t Salt (I am pretty sure I eliminate this, seems to do fine without it)
    1-1/2 C Flour

    Before you Begin:
    Spray the pan with the vegetable oil spray
    Have the adult melt the 1/3 C butter and preheat the oven to 350.

    1) Peel and slice 4 ripe bananas into chunks (no need to do this using my above method). Put the bananas in a large bowl and mash the bananas with a potato masher. Stir in butter.
    2) Crack the egg into the small bowl. Beat egg with the fork.
    3) Add the egg, sugar and vanilla to the banana mixture. Stir in baking soda and salt (if using salt).
    4) Mix in flour. Add 1/2 C chocolate chips and 1/2 C chopped nuts if you desire. Pour mixture into the loaf pan. Have your adult bake for 1 hr. Cool on a rack before removing the bread from the pan.

  3. So glad you posted this. I transferred the recipe to an index card and forgot the FLOUR!! And of course recycled the magazine ages ago!

  4. I've been coming back to this post for years just to get this recipe. Try it with honey butter spread... yummy!
